10 Kombucha Questions Answered!


No 1: Is SCOBY and Kombucha the same thing?

Scoby and Kombucha are not the same thing. Scoby is an acronym for a symibiotic culture of yeast and bacteria.It is the interaction of the bacteria and yeast  with sugar tea via the fermentation process that creates the end product which is kombucha.
A simplified relationship for kombucha and Scoby is as follows; 
Kombucha Scoby + Sugar Tea = Kombucha


No 2: How much kombucha should I drink daily?

For starters it is best to start at around 50ml.  This is to get your body to get used to the introduction of good bacteria into the body. From there on you can gradually increase the intake.


No 3: How long can I keep a brewed kombucha?

In room temperature I usually keep my brew for around 2 weeks.  If kept in the fridge I will stretch the duration up to 4 weeks.
Kombucha has lots of good bacteria. If you keep it way too long the number of bacteria will start to reduce thus reducing the health impact of the drink.


No 4: Can I keep Kombucha Scoby in the fridge?

Similar to question no 3, the answer is yes you can. However keeping the Scoby in the fridge for far too long will cause it to go into deep hibernation and there is a risk that it might no longer be able to brew.


No 5: Is kombucha an alcoholic drink?

Many of my Muslim friends ask this question.  Since there is alcohol in kombucha is it halal?
A quick search in Islam Q and A  website(http://islamqa.info/en/146710) revealed that it is halal considering the fact that kombucha only has around 0.0065% of alcohol and drinking it does not lead to drunkenness.


No 6: Kombucha brewing uses white sugar. Since it is well known that white sugar is harmful to the body wouldn’t that mean that drinking kombucha is harmful?

The white sugar is not meant for your consumption. It is the food for the Scoby.  By the time the fermentation is complete there is only approximately 2-6 grams of sugar in 240 ml of kombucha. That amount is way lesser than the amount of sugar in a cup of orange juice which may have 4 times the amount of sugar. The amount of sugar will lessen even further if the duration of fermentation is extended(this is highly recommended for diabetics)


No 7: Is kombucha a miracle drink?

There had been numerous unfounded claims of kombucha being a miracle drink which heals all kinds of conditions. I am quite skeptical about all these claims. Personally I believe kombucha is a refreshing probiotic drink that helps keep your body healthy with the introduction of good bacteria into the body and also helps detox and cleanse the body.

No 9: I notice something like a deformed baby Scoby growing in the brewed kombucha. What is that?

The so-called deformed Scoby is in fact a Scoby. However due to the lack of sugar in the brew, it cannot grow into a well-formed Scoby. It is perfectly safe to consume the deformed Scoby or you can simply filter and throw it away.


No 10. There were vsome mold on the Scoby. Can I wash it off and reuse the Scoby?

Though the Scoby had been washed, there is still a chance that the spores of the Mold and its toxins are still in the Scoby. It is best to dispose the Scoby and get a new one.

    I’m recommending Dr Godday to everyone who have herpes virus to get the cure from him.     I was diagnosed as HEPATITIS B carrier in 2013 with fibrosis of the
    liver already present. I started on antiviral medications which
    reduced the viral load initially. After a couple of years the virus

My Scoby is Thicker than Yours

Help!! My Scoby is Floating!!

Believe it or not, the phenomena of a floating Scoby happen quite regularly and it will spook the daylight out of 10 novice brewers. Scoby floating The newly formed Scoby will slowly inch higher and higher from the surface and in certain cases looks as if it is actually levitating. Quite a feet to achieve for a group of bacteria and yeast isn’t it? Based on experience a floating Scoby does not harm the end product, in fact it kombucha that is produced in such a scenario has extra fizz to it. The downside?  A thinner baby Scoby because the baby Scoby cannot grow consistently as it the gas will disrupt its growth by pushing it away from the brew.
